Crispy-skinned jacket potato and tuna mayonnaise

 


Cooking time:

13 to 15 mins

Ingredients:

  • 150 potato/sweet potato
  • 1 tsp extra virgin olive oil
  • 1 can of tuna in brine
  • 1 Tbsp low fat mayonnaise

Method:

  1. Preheat your oven
  2. Prick the potato a few times with a fork
  3. Cook the potato for 8 to 10 minutes in the microwave turning it over halfway 
  4. Brush the cooked jacket potato with the olive oil
  5. Place the jacket on a baking tray and bake in the oven for 5 minutes
  6. Drain and empty the tuna in a bowl and mix in the mayonnaise
  7. When the potato is ready, cut it open lengthwise down the middle
  8. Spoon the tuna mayonnaise onto the jacket potato
  9. Season with salt and pepper
