Cooking time:
13 to 15 mins
Ingredients:
- 150 potato/sweet potato
- 1 tsp extra virgin olive oil
- 1 can of tuna in brine
- 1 Tbsp low fat mayonnaise
Method:
- Preheat your oven
- Prick the potato a few times with a fork
- Cook the potato for 8 to 10 minutes in the microwave turning it over halfway
- Brush the cooked jacket potato with the olive oil
- Place the jacket on a baking tray and bake in the oven for 5 minutes
- Drain and empty the tuna in a bowl and mix in the mayonnaise
- When the potato is ready, cut it open lengthwise down the middle
- Spoon the tuna mayonnaise onto the jacket potato
- Season with salt and pepper
