Healthy egg on toast

 


Prep and Cooking time:

15 minutes

Ingredients:

  • 2 slices of sourdough toast (about 80g)
  • 30g 50% reduced-fat cheddar cheese 
  • 4 slices of wafer-thin turkey ham
  • 2 medium-sized eggs
  • 4 squirts of olive oil spray
  • Rocket salad

Method:

  1. Heat the oil in a non-stick frying pan that has a lid or that you can cover
  2. Once the oil is hot, carefully crack the eggs onto the pan and cover the pan
  3. Allow the eggs to cook until the whites have completely set
  4. While the eggs are cooking, put the sourdough slices in the toaster
  5. When the toasts are ready, layer the toppings evenly on each slice of toast in this order:
    1. Sliced cheddar cheese
    2. Turkey ham
    3. Rocket salad
    4. Egg
  6. Season with salt and pepper

Servings:

    One...oh, come on, this is supposed to last you a good few hours! 😉
