Prep and Cooking time:
15 minutes
Ingredients:
- 2 slices of sourdough toast (about 80g)
- 30g 50% reduced-fat cheddar cheese
- 4 slices of wafer-thin turkey ham
- 2 medium-sized eggs
- 4 squirts of olive oil spray
- Rocket salad
Method:
- Heat the oil in a non-stick frying pan that has a lid or that you can cover
- Once the oil is hot, carefully crack the eggs onto the pan and cover the pan
- Allow the eggs to cook until the whites have completely set
- While the eggs are cooking, put the sourdough slices in the toaster
- When the toasts are ready, layer the toppings evenly on each slice of toast in this order:
- Sliced cheddar cheese
- Turkey ham
- Rocket salad
- Egg
- Season with salt and pepper
