Preparation and baking time:
50 minutes
Ingredients:
· 200g self-raising flour
· 1/4 tsp ground nutmeg
· 1/2 tsp ground ginger
· 1 tsp ground cinnamon
· 100g grated butternut squash
· 100g low-fat butter
· 3 Tbsp honey
· 1 tsp vanilla essence
· 100g 0% fat skyr
· 3 medium-sized eggs
Method:
1. Preheat your oven to 180°C
2. In a mixing bowl, cream the butter and honey until the mixture is light and fluffy
3. Beat the eggs, skyr and vanilla essence well into the mixture
4. In a separate mixing bowl, mix the nutmeg, ginger and cinnamon into the flour
5. Add the grated butternut squash evenly to the flour
6. Fold the flour and butternut squash into the wet mixture
7. Spoon the batter into a 2lb/900g loaf tin
8. Bake for 40 minutes
