Low-calorie Coffee and Walnut Loaf Cake (VE)

 


Preparation and baking time:

50 minutes

Ingredients:

·         200g self-raising flour

·         80g chopped walnuts

·         100g low-fat butter

·         3 Tbsp honey

·         5 tsp of instant coffee

·         1 tsp vanilla essence

·         100g 0% fat skyr

·         3 medium-sized eggs

Method:

1.       Preheat your oven to 180°C

2.       In a mixing bowl, cream the butter and honey until the mixture is light and fluffy

3.       Add the coffee and vanilla essence – mix well

4.       Beat the eggs and skyr well into the mixture

5.       In a separate mixing bowl, mix the walnuts into the flour

·         Coating the walnuts in dry flour will stop them from sinking to the bottom

6.       Fold the flour and walnuts into the wet mixture

7.       Spoon the batter into a 2lb/900g loaf tin

8.       Bake for 40 minutes
