Ingredients:

200g self-raising flour
·
80g chopped walnuts
·
100g low-fat butter
·
3 Tbsp honey
·
5 tsp of instant coffee
·
1 tsp vanilla essence
·
100g 0% fat skyr
·
3 medium-sized eggs
Method:
1.
Preheat your oven to 180°C
2.
In a mixing bowl, cream the butter and honey
until the mixture is light and fluffy
3.
Add the coffee and vanilla essence – mix well
4.
Beat the eggs and skyr well into the mixture
5.
In a separate mixing bowl, mix the walnuts into
the flour

Coating the walnuts in dry flour will stop them
from sinking to the bottom
6. Fold
the flour and walnuts into the wet mixture
7. Spoon
the batter into a 2lb/900g loaf tin
8. Bake for 40 minutes
