Preparation and baking time:
50 minutes
Ingredients:
· 200g self-raising flour
· 100g blueberries
· 3 medium-sized eggs
· 3 Tbsp honey
· Juice from 2 lemons
· 1 tsp vanilla essence
· 200g 0% fat skyr
Method:
1. Preheat your oven to 180°C
2. In a mixing bowl, beat the eggs, honey, lemon juice, vanilla essence and skyr
3. In a separate mixing bowl, mix 85g of the blueberries into the flour
. Coating the blueberries in dry flour will stop them from sinking to the bottom
4. Fold the flour and butternut squash into the wet mixture
5. Spoon the batter into a 2lb/900g loaf tin
6. Dot the remaining 15g of the blueberries on top of the batter
7. Bake for 40 minutes
